That part I put in bold there, that is the bible claiming to know the will of god.

If someone answers those, they are just speculating. If someone asked why did God choose Moses to lead the Exodus, then the answer's pretty clear.
But you didn't make the claim that we don't know everything about god. You made the claim that god's will is unknowable. It is unknowable yet somehow you know that he loves us, hates sin, and wants us to go to heaven.
