I have an employment lawyer friend who I asked about this exact topic. Her reply was that it is a little bit of a grey area, but the business is more likely to win any court case.
There are many exemptions in the law.
It is perfectly legal for example for an indian restaurant to only hire Indians as it is in keeping with the expectations of the business.
It is entirely legal for a womans gym to only hire female staff. (there are several women only gyms around here).
And if you can't do the job because of your religion then you don't get the job. The law is there to enforce equality not stupidity.
