I made hot and sour soup today, using this recipe from Smitten Kitchen.  I made 2 changes:
  • Because I was using fresh shiitake mushrooms, I sautéed them with the scallions, garlic, ginger and pork rather than throwing them in near the end.
  • Used miniature deep-fried tofu cubes rather than raw tofu. (If I can only find larger cubes of fried tofu I cut them into smaller pieces.)
The insane thing is how fast it is to make this.  Starting with just a pile of unchopped and unsliced ingredients on the counter, I had the finished soup on the table in maybe 40 minutes.

Took friends out for a special meal last night. Prime rib, incredible salads, exotic desserts, fabulous side dishes, and it's kinda funny; hadn't seen these people for ages, and the food itself wasn't all that memorable, it was the comradery.

I think we could have went to BK and had as good a time.

Well, I'll take back a little bit of that, that one waiter was darling . . .
 The granting of a pardon is an imputation of guilt, and the acceptance a confession of it.

I made chicken fajitas tonight: strips of chicken breast, jalapeño, bell pepper, and red onion pan-fried in cast-iron in hot corn oil with lime juice, hot sauce, cumin, garlic powder, black pepper, and salt, topped with chopped green onions, cilantro, sour cream, and salsa.
