I know what you mean, growing up in Alaska we ate mostly salmon (and moose  ) and it really wasn't my favorite, it totally depends on how you cook it.
The only way I like it is grilled, basted with a sauce made with butter, garlic, soy sauce, and lemon juice. The smoke flavor from the grill takes it to a whole nutha level.
I'd almost be willing to guarantee you'd like it.

At the opposite end of things I fried up some tuna steak the other day and had it on a sandwich. Better than a hamburger with the consistency of a beef steak.
Another one for that, different genus but same texture, is thresher. One of the few seafoods I truly enjoy.

Are you going to color any portion of it? A warm red would look great, though I like the chocolate color, too.
