For people that like chemistry...something like a book/kit for molecular gastronomy with a focus on food chemistry would probably get a lot of use if your granddaughter enjoys cooking too.
The other thing that comes to mind, is to get her a Raspberry Pi starter kit.
Not really related to chemisty or physics...but a lot of people I know who are into science, don't realize how rewarding programming/CS is until they are given a little nudge in the right direction
