But then you find gold, like (anyone a Final Fantasy VII fan?) "Guilt's Cost", with Tifa and Vincent. Love that fic!
Finding a good fanfic writer, or a well-written fanfic, is like finding a brown M&M in a dump truck full of shit - it's in there and if you wade around long enough you
could find it... I keep a list of authors and stories that I liked so if I ever get the hankering I have a go-to list.
I've given up on Harry Potter ff, personally. Perhaps it's just that I've noticed my tastes changing as I get older and I have less patience for fanfic that isn't well planned, or well written, or well plotted, or ends up being a goopy, boring shippy nightmare.
That's also the reason I never post my own fanfic: I can't be bothered to plot a story out and I'm not particularly adept at fiction writing, even though I love reading fiction and I love learning about the elements of what makes fiction writing and story-telling so compelling. I also never finish anything, so there's that... :p
One really interesting read I think every single fanfic writer needs to read is:
The Elements of Fiction Writing: Scene and Structure

There's a whole series of these books, but this one was by far my favorite and really opened my eyes to why I like the stories I do and why some stories succeed and others fail even though there was a good idea there. Fantastic book.
