I think it's a fine line. I agree with the "keep your mouth shut" part. There are all sorts of ways to avoid getting drawn into conversations about religion. But if you're really pushed, then state the truth simply. I think most of us can tell the difference between somebody who is just curious, and wants to understand, vs. somebody who wants to try to change your mind. Whatever you do, don't ridicule their beliefs. It won't go over well.
