Fwiw, water cooling will help to keep the parts cool (CPU,GPU,chipsets,ram) when o/c'ing, but the main reason is for quietness. I don't o/c mine, but because mine is "open", the fan noises are amplified.
With water cooling, you just have one or 2 slow moving 6 inch fans blowing air through the radiator only.
Mine's a custom setup using a Toyota heater core as the radiator.
(It really is mild compared to some crazies out there though)
