A sphere's border is always decreasing. Your sight might be very tough; but it can never catch the curve resulting from the decrease of borders spherically.
A comment I have: the earth does not seem to extend to infinity. If the earth was flat, the eye would have no problem at all seeing the entire earth. Please inform me what is this "end of sight" you speak of? Is it like a certain length that the eye stops seeing things? You do know we can see stars right?
