a process is not a theory; I totally get that
freefalling is a process; gravity is a theory
no, both gravity and evolution are theories. but they are both consistent with broad observations or processes in nature with a minimum amount of ad hoc adjustment, and exhibit high degree of accuracy and precision in predicting the outcome of processes before these have been confirmed by observations. Therefore these theories are very likely to be close mental conceptual analogues of the parts of the actual process in nature these theories cover.
of course the natural processes may have deeper roots and broader impact not yet covered by the theories, but to the depth and breadth the theories do go, they appear accurate.
