Spicy breaded chicken patty sandwiches. I'm trying something new. I bought aluminum foil broiler pan liners and put the patties directly on the broiler pan liner. They were cooked at a relatively low 350 F, so they were not especially sensitive to time variation. I'll have to see if food cooked at higher temperatures requires more time, keeping my trusty meat thermometer handy. I had previously put a pan lined with aluminum foil at the bottom of the air fryer and simply let the grease and liquid drip down through a wire rack. But that gets the rack dirty, tends to splatter, and is more laborious to replace. I also have a roasting rack that's slightly smaller than the aluminum foil broiler liners, and parchment paper sized so the feet on the roasting rack fit on top of the parchment paper so it doesn't blow around. I'd like to see how well the parchment paper absorbs the cooking grease and liquids with the hope that often I can just toss that and quickly reuse the aluminum foil liner.
