It will stay fine for a time even with air in the container, but after a while you'll start to get freezer burn. The fact that most ham is cured originally probably helps.
I don't have a vacuum sealer but I assume that a good quality baggie with as much air as possible pushed out would yield good results. I will give that a try. Thank you.
