Insecurity.
The offense may actually have an origin, though it's no less insipid and questionable as not having one: by questioning their religion, you're telling them that they're wrong. And not just wrong about any old thing, but wrong about something they've pinned a lot of hope on. What offends is that you've dared question them at all; that's why the reaction is so similar across religions.
It's ego: "What? How could I possibly be wrong?"
