That's my view - if you *need* to sauce it for it to taste good, you did something wrong. But sauce is good. :p
What I object to is things like brisket that are pre-sauced and chopped. Sauce covers a lot of sins. I'll take my sauce on the side.
As Kitty said, around here, what a lot of people call barbeque is just grilled meat. Proper barbeque is cooked with wood smoke, low and slow. Served with proper sides like mac and cheese, cornbead, greens, beans and rice, baked beans, macaroni salad and the like.
Beyond all that, I don't care if it's Texas, Carolina, St. Louis style, or wherever else, as long as it's good.
