Yep, and use a good thermometer, not the shitty one that came with the grill. I like to keep the temp right at 225-230. Takes forever to cook, but the results are yum.
Gotta confess, I don't use a thermometer at all, I go seat-of-the-pants. More labor intensive, but what the hell, I'm out there drinking beer anyway.
