Standard in the business, son. You cook the ribs low and slow in the oven, you finish them on the grill. That's how you get them to fall off the bone.
I'm no big fan of ribs, but you can get the same effect by wrapping in foil and cooking offset (coals on one side, ribs on the other) and going low and slow, then removing them from the foil and finishing over the coals.
Keeps you out on the deck where the beer and sunshine are.
