Becuase you could read what you want into them. As an atheist I could read:
3-expansion of the universe:
"And it is We who have constructed the heaven with might, and verily, it is We who are steadily expanding it."(Quran, 51:47)
4-the big crunch and the flat universe:
"The Day when We will fold the heaven like the folding of a [written] sheet for the records. As We began the first creation, We will repeat it. [That is] a promise binding upon Us. Indeed, We will do it."(Quran 21:104)
51:47 above as evidence the Qu'ran is wrong as the universe is not steadily expanding but expanding at an ever increasing and dizzying rate,ie flying apart from itself faster
21:104 as suggesting Qu'ran thinks the big cruch is the likely outcome, but the best science suggests a universe in ruins through entropic heat death expanding forever into darkness
NEITHER of us has proved anything. The only thing we know is that the Qu'ran was written by ignorant men, who claimed divine inspiration. Whether they had depends on your persepctive. I don't think it is anything more than a plagarism of previous works and there is no revelation in the Qu'ran or any other the so called holy book that could not have been put their by bronze or iron age men, nothing at all. Better evidence that man created gods rather than the reverse.
