I don't think that many Christians really believe that their god is omnipotent and omniscient. Science does not claim to know everything nor can it demand worship. Scientist don't make claim that following science will lead to eternal life either.
If Christians make a claim that their sentiment being who is all powerful and all knowing is a just mythological figure then non Christians will judge him by his actions in the Christian holy book.
Christians claim that their god has a lot of omni attributes. Not only is he powerful but he is the most powerful being in the universe. He isn't just smart, he knows everything. Atheist take Christians at their word and expect the mythology to at least be consistent in its own world but it isn't. When a non Christian points out the flaws in the religion, Christians feel like their faith is under attack so they lash out or get defensive.
