Does the vodka burn off in the cooking?
Short answer: No.
Longer, practical answer: Effectively, yes. The boiling point of alcohol is about 78C, and - since most foods are cooked at a higher temperature - most of the alcohol will cook off. But cooking for an hour leaves about a quarter of the booze behind. After three hours, there’s still about 5% left. The alcohol in food will never completely disappear, but you’re not going to get hammered from jarred vodka sauce or a slice of rum cake, either.
