INGREDIENTS
3.5-4 Cups Bread Flour, plus more for kneading (Chef's note: Using bread flour will give you a much crispier crust. If you can't find bread flour, you may substitute with All-Purpose flour which will give you a chewier crust)
1 tsp. Sugar
1 packet Instant Dry Yeast
2 tsp. Kosher Salt
1.5 Cups HOT water, 110 degrees
2 tbsp. Extra Virgin Olive Oil (plus more for coating bowl)

DIRECTIONS
Combine bread flour and kosher salt in a large bowl. In a separate bowl, add yeast and sugar to water, let stand 5 minutes or until frothy. Add the 2 tbsp. olive oil into the flour and salt mixture and then add the hot water containing the yeast and sugar. Mix thoroughly by hand until all dry ingredients are blended through. Turn dough out onto a lightly floured surface and GENTLY knead the dough for 1-2 minutes (DO NOT over-knead the dough or it will fail to rise). If the dough is too sticky, add more bread flour. If the dough is too dry, add more hot water. The texture of the dough should be elastic and slightly sticky. Coat a large bowl with olive oil and place the dough ball into the bowl. Cover the bowl with plastic wrap and place in a warm draft-free area until dough doubles in size (approx. 1 hour). After the dough has doubled in size, punch the dough down and separate into two equal portions. Dough is now ready to use or can be placed into the refrigerator for up to two days. Dough can also be frozen for several weeks. Set oven temperature at 450 degrees and lightly grease a oven safe baking pan or pizza pan (may also be baked at up to 550 degrees without grease on a stone). Stretch dough onto greased pan and add favorite toppings; sauce, cheese, meats, veggies, and so on. Bake for 10 minutes or until cheese is melted and bottom of crust begins to brown. Enjoy!

Damn, FFF that sounds like some righteous pizza dough. I have a soft spot for crispy thin crust. If my oven wasn't a POS, I'd make some for sure.

This is one of those times when I start thinking about building a backyard wood-fired brick oven again.

Thanks! I developed this recipe over a four year period. Every step is essential, and must be followed exactly. I too have a POS oven, but 450 degrees for 10 minutes does the trick. The hotter the better - 550 if possible (@ less cooking time). This crust turns out almost exactly like a wood fired pizza. It's light, crispy, flaky and Ohhhh so freakin yummy!

Trying to get through that damned addictive Candy Crush demon (level 88) with the volume on max in my headphones, as a way to keep my mind - and my depression - off the highly distracting sounds from the floor above.

Also eating a chicken and mushroom Pot Noodle without water... livin' on the edge.
At the age of five, Skagra decided emphatically that God did not exist.  This revelation tends to make most people in the universe who have it react in one of two ways - with relief or with despair.  Only Skagra responded to it by thinking, 'Wait a second.  That means there's a situation vacant.'

I recently got better from a bacterial infection in my upper respiratory tract, but now it seems that I've gotten another infection (viral this time), my fever is rising, my muscles and throat are sore. Pity me! [Image: smiley-sick010.gif]

And Stimbo, my go-to game when I'm feeling down is Bejeweled, there's nothing quite like repetitive games with a lot of noise, color and sound effects to get your mind off things.

Just had a wonderful meal of chicken hind quarters, braised in a traditional French peasant manner, served with baguette for dipping.

I'm on level 500. (yes that is the highest level currently available :p)

Just came back from a very disappointing halloween event. Very disappointing.
