Swedish cabbage stew

Swedish cabbage stew
Cabbage. A cheap, healthy vegetable. But what on earth do you cook with it?
You can make cole slaw, certainly. (Thank you America!)
But other than that, there are few options. There are certain chinese dishes with cabbage in them, I've heard. But the list of hot dishes with cabbage is short.

Here is a recipy for a cabbage stew from the west coast of Sweden.
It is basically a de-constructed version of 'kåldolmar'. A hidden gem of the Swedish cuisine!

INGREDIENTS:

250 grams of ground beef
250 grams of ground pork
1 kilo of cabbage (cut into pieces approx. 2 cm across)
Approx. half a litre of veal stock
1 teaspoon of chinese soy
One onion, finely chopped
Allspice, to taste
White pepper, to taste
Salt
Butter or margarine for frying

Fry the ground meat in a cast iron vessel, on high heat. When it's starting to brown, add the onion. Sprinkle a few pinches of allspice on it, and some salt. Turn the heat down to low.
Add the cabbage. It will reduce quite a lot when you fry it.
Fry the mix of ground meat, onion and cabbage together until the cabbage has shrunk down.
Add half a tablespoon of ground allspice, some white pepper, and the veal stock. Also, put the soy sauce in there.
If the stock does not cover the mix of cabbage and meat, add water. It should cover it barely.

This should boil on low heat under a lid for at least 20 minutes. Cabbage is season sensitive, so the time you have to boil it may vary.

This sounds really really good.

Must be the Irish in me, but I love cabbage. Always looking for new things to do with it.

The broth that this produces is something out of this world.

Why did you thank America for coleslaw?! Do you think coleslaw is American? It's Dutch!

I love cabbage. My Nan used to make boiled bacon, cabbage and mash and I used to have extra cabbage instead of the bacon. Yummy!

Coleslaw is Dutch? Then I stand corrected.
Could you give a recipie for the dish you described?

It was literally just boiled bacon, boiled cabbage, and mash. Nothing fancy.

Boiled bacon? That doesn't sound so good. Although it could probably release a lot of smoke flavor.
How was the cabbage boiled?
What type of mash was it?

Smoke? What smoke? Boiling doesn't produce smoke.
The cabbage was boiled in water.
The mash was regular mash, with probably too much butter, knowing my Nan! lol

Bacon is normally smoked meat. That is to say; pig meat that is hanged in a room full of wood smoke for a really long time.
Pig that is not smoked (well most of it really) is ordinarliy called pork.
So she just regularly boiled the cabbage in water?
There can be no such thing as too much butter in mash.

Sounds like colcannon - cabbage, mashed tatties, bacon and leeks or scallions. Grew up on that stuff. Still love it (but foods you had when you were a child are never as yummers once you're an adult).
