To be clear, the gravy on biscuits and gravy is really a sausage roux. Just milk and flour and salt/pepper with spicy sausage crumbled up.

And here's the more Scottish version. Instead of links sausages, it has Lorne sausage (which most of Scotland refers to as 'square sausage')

Of course, you can add in more stuff if you like. Mushrooms are common in the Scottish version too, they're just not in this picture.

Brown square is the sausage. Not sure what a quesadilla is  but it's a potato scone.
