I kind of think the real reason is that there isn’t a Nobel Prize for theology or philosophy. That said, a whole lot of deeply religious people have won Nobels.
But suppose someone did prove the existence of God - which of the Nobel categories would it fall under? Certainly not physics, chemistry, or medicine, since God would be a non-physical being. I don’t see such a proof qualifying for Peace or Economics, for obvious reasons. Literature, maybe.

The Nobel Prize could be given in the field of physics if they proved that God started the big bang. Or if they proved that prayers heal people, they could get a Nobel in medicine. Or Nobel in chemistry if they proved that vine turns into blood. And so on.

Proving what God does isn't the same as proving that God exists.

That's the point. In some alternative universe where God (of the Bible) exists, it would be easily possible to prove him and get the Nobel Prize. Like the opposite of Newton's findings in which the angels are pushing planets.

You wouldn't get a Nobel for proving God exists any more than you'd get a Pulitzer for building a log cabin.
