Definitely Santana and his love of one long, sweet note. Guitarists have signature tones, dynamics, and comfort zones that for fans and players make them easy to identify. It's hard to narrow down.

The guitar work on Zorba the Greek is extraordinary. I think played by Tommy Tedesco of the Wrecking Crew. I know he played mandolin on it.
