Coming back to this because I don't think any admins have responded. Thanks to those that tried to help, though.
Is there a way for me to set my default settings so that the options on each post are set how I want them? Or, am I wrong and the options at the bottom of each post do not override my default?
Here's a response from an admin. I am not subscribed to any threads as I have to look at all new posts. Therefore, I have no experience with subscriptions or notifications to same.
Play around with your settings till you get what you want is the best I can do for you. This should answer the question of whether or not making a new post in a subscribed thread changes your preferred settings.

Edit to add: I am still subscribed to this thread despite the default "do not subscribe" radio button being checked.
