Not generally considered a god in Greek mythology, but Prometheus would be my favourite. Put heart into creating human beings and cared for them, providing them with such things as fire which he had to steal from the gods. As such, he was punished by the gods and subjected to a vastly long period of torture, all for the sake of humankind. More Jesus than Jesus himself

Totally agree. He gave us the means (fire) to transform ourselves from "ape-like" creatures to the species we are today. Without him we would still be shivering in caves and chasing squirrels for something to eat.
