Um no we are not. And I wish some atheists, not you here, but over the years, would stop coddling theists with trying to pander to their sense of fairness by "splitting the baby".
There is a lot that many atheists consider over long periods of time combining human history with science and probability that leads us to the conclusion that humans are merely projecting their own qualities into super hero claims.
Understanding when an atheist says, "There is no God/god/s or deities" is as simple as the theist thinking about all the other god claims they reject, and take that rightful rejection and apply the same logic to the one they hold to be true.
If most humans can rightfully say Apollo was made up what makes anyone today think Allah/Yahweh/Jesus are anymore real merely because they are currently popular?
Humans are mostly sold their religion at birth by their parents before they can formulate adult critical thinking skills.
It is true that as far as the future is concerned, since we have not lived it yet, we make new discoveries all the time.

Um no, that is only regarding the future, not the current and not the past. And as far as the current and the past, THERE IS TONS WE DO KNOW, and lots of bad claims have been scrapped as they should be.
If it worked like the theist wants, then everything is true by default all at the same time.

Saying humans make up gods and deities is a far more simple explanation and does not cause the problem of infinite regress.
Just like we once thought the earth was flat, and now we know it is a round globe.
Claims of super natural beings in our entire human history, both polytheism and monotheism, are mere reflections of humans.
The universe does not need a magic factory boss. Humans simply need to accept we are a mere blip in all this.
