Dang! I ran out of almond milk, so no bran flakes with my Morningstar sausage patties. Wheat thins instead. 

At least I hit the grocery store this afternoon.

Slice of belly meat, cut to small strips, Champignons, hacked fine, tomato, sliced, peas and rice. All stewed for one to two hours in a pot with a bit of butter on top, peppered and salted, of course. Served with a generous bit of Parmesan on top, still hot, so it can melt.

Simple and cheap recipe by my mother.

In an effort to lower the quantity of cigarettes I smoke daily, I just ate a huge salad (about 3 pounds) and the same weight of fried potatoes.

I've been on a home-made pilaf kick lately.  Made it so many ways.  Salsa pilafs, chicken and peas an carrots, beef pilaf, orzo/no orzo, vermicelli..different rices...roasted red peppers and garbanzos, peanut butter pilaf (not kidding, try it).  Garam masala pilaf, salmon and cilantro.....soooo good.

Really makes a difference on my dinner time bottom line with the army I'm feeding, it's filling..nutritious...and totally made from scratch, so, delicious.

Just made a big ass batch of gazpacho w/ 5 pounds of marked down heirloom tomatoes, 3 ears of sweet white corn, 1 lg sweet white onion, 1/2 large sweet purple onion; 3 jalapeño peppers; 3 grilled & skinned red bell peppers; 1 c good olive oil; 1/2 c red wine vinegar; 2 euro cucumbers, 1 bunch of radishes, 1/2 a jicama. We'll be eating it for a week. Nom, nom, nom.

Pilafs are definitely one of the best ways to cook rice, especially risotto, in my opinion.
I've recently discovered Jasmati rice, a hybrid of Basmati and Jasmine.
Apparently it's been around for a while but I'd never heard of it.
It's quite good. Still love my brown rice the best though. :-)

Love risotto but have a hard time not turning it to gruel.  Any tips?

I posted my risotto recipe right above. You have to make it boil, with the right amount of water, which is about a 4th of the added amount of rice. When it boils, you have to draw the pot to a different hotplate which you have preheated at the lowest setting. Maybe one or two notches above the lowest settings, depending on the amount of water. You cover the pot with a lid and let it stew till all the water has evaporated, which is usually one or two hours. So start early and have patience.
