How to be a vegetarian? (And also, why to be one?)

I hate that we eat meat. If food wasn't one of my greatest passions, I'd go vegan in an instant. Even though I don't necessarily think eating meat is immoral, it does hurt my conscience to do it and I always have to buy organic/humanely raised meats to relieve a little bit of the guilt.

Here's a good and easy recipe:

Super easy, too. If you're not vegan, I recommend adding some crumbled feta right before serving. MmmmMMmmm.

Most respect those who speak truths they agree with, and their respect for the speaking only extends as far as their realm of personal agreement. It is less common, almost to the point of becoming a saintly virtue, that someone truly respects and loves the truth seeker, even when their conclusions differ wildly."

Oh, and this:

^It has a vegetarian version. If you don't like spicy, omit the jalapeno, use mild green salsa, and mild chilis.

I'm not sure what's up with the snide remarks, personally.  Undecided

Quote:This isn't a huge leap, because we have slowly been reducing meat in our diets lately, but eliminating it entirely is still a big step to take.

We have 3 main reasons for doing this.  The Pros:
1. It is what is best for the health of the earth.
2. It is what is best for the health of ourselves.
3. It is what is best for the health of the animals in question.
4. I want my kid to have a future, for there to be a rainforest, fresh air and water, seas filled with life and not dead zones and plastic islands.  I want my kids kids kids kids, and so forth, to have the same.
1. Okay......I think that this is too nebulous to comment upon.
2. Not even remotely true, although it's completely true that most of us could eat a lot less meat, and different kinds of meat, and it would be much more healthy.
3. If, by health, you actually mean "extinction"...sure, I guess?
4. Your kid is going to have a future regardless, the rest...TBD, but it may be that meat production is the thing that ensures that your child has fresh air and water, seas filled with life. At least, that's the sort of production I'm aiming for in my operation.

Quote:Just a few years back, I was defending eating meat.  I know that humans have evolved to consume animals.  I grew up on a farm and helped kill and prepare chickens, turkeys, and even rabbits. But my views have changed over time, and I now look back on my old self as both ignorant and selfish.
Why...did your family engage in poor practice?  Describe their operation?

(mind you, I applaud your decision to make your dietary choices a focus in your life, and wonder what those consequences are.  Your vegetarianism hurts no one and is your own  decision....but these clams above...another story.)

Thank you for the recipes CL! I probably should have mentioned that I'm not big into Mexican spices. I enjoy Asian spicy food, like wasabi or currys, same with my kid, but I get serious heartburn from hot peppers like jalapeños.

I do like mild Mexican spices. Spanish rice is excellent, and something I should learn to make from scratch.

I'm kind of surprised how many people really would not even consider even eating less meat, considering the state of the earth and how much difference making this one change could make. I guess this is one of the reasons I fail at making friends or getting on in society very well. Human beings, even nice ones, are generally pretty petty and selfish. Including myself. The human race depresses me so much every day, it is hard to leave the house.

If you're depressed by the selfishness of meat production....perhaps it's only due to your unfamiliarity with anything other than the worst examples of the dominant paradigm?
