Just a light off topic topic. I like scrambled egg whites, with a few veggies tossed in. *mmmm*

My friend told me that I always order my eggs the same, and that is a sign of someone who is afraid to move out of their comfort zone. (She reads into everyyyything.)

But, she got me to thinking, maybe I should try something new.

Are you stuck in a rut like me? (with your eggs)

How do you like your eggs?

We try to eat as few eggs as possible, not for health reasons, but for the chickens' sake. When we do, wife usually likes em cooked, I like em scrambled, so we take turns. Scrambled eggs with a bunch of fresh herbs thrown in just before serving them. Then add some Tabasco = bliss.

I like variation. I mostly like the eggs cooked separately from other ingredients and layer them on toast or in sandwiches which is more family friendly for the varied tastes among our five family members.

Okay now seriously. Aww man, I love me some eggs. It's part of the reason why I just do not have it in me to go vegan. I like them scrambled (and when I was a kid my mom would put green food dye in them so they would be green eggs... like in green eggs and ham), boiled, and over easy. The only eggs I do not like are deviled eggs and not real eggs and those peculiar square yellow chunks that cafeterias sometimes have that they claim are eggs.

And because I am a vegetarian, I do not like eggs that are contaminated by touching meat that get that meat flavor on them. Ewwwwwwww.

Sunny side, with fried bacon, fried sausage, black and white pudding, pickled onion, toast with jam, and a ginormous mug of tea.

Over-easy on top of scrapple and deviled are my favorites.

I can't keep up with all the eggs my chickens lay -- but I do try. Not too picky... I like them fried, scrambled, sunny side up, soft boiled, hard boiled, poached, basted. I love egg salad, frittatas, Eggs Benedict, omelets and deviled eggs, too. About the only thing I don't do with them is pickle them or eat them raw. Best with lots of veggies and a bit of cheese, and if with bacon or ham from my pigs... doesn't get better.

These ideas are just what I was hoping for...perhaps, I will try a new type of egg dish that you all posted here every time I have eggs.
