did you know you've never actually had sharp cheddar ??
Really. Never even suspected how pale and passive and pathetic even stuff marked "extra" or "super" or "seriously" actually is until I encountered some cheddar (the package unmarked, btw, as regarding it's sharpness) that was imported from Brazil. Found it at Caputo Cheese Market in Chicago.
It is as much sharper as the sharpest you've ever had as that was to a glass of milk.
It reeks too. Let your friends smell it and then take a bite.

When I want pungent, I get a block of feta. It makes my favorite Vermont white seem positively sweet in comparison. Nothing wakes up a salad like crumbled feta.
