Christmas Dinner

It's that time again for my infamous Christmas dinner recipe.
Reindeer roast for Christmas is a family tradition. The farmed animal is called reindeer. The wild animal is called caribou. Now is the time to place your on-line orders.
The most important thing is to control your heat. The roast should stay above 130 degrees for one hour to kill bacteria without overcooking.
First we must prepare our roast:
Vixen your roast with canola oil.
Donder is with salt
Blitzen it with pepper
Dasher it with garlic and onion powder.
Put a Cupid of water in the roasting pan and place the roast in the pan on a rack out of the water. Drain some water if necessary.
Place your roast into a preheated slow oven set at 300 degrees.
Set your digital thermometer to 130 degrees and insert into your roast. The cooking time will vary depending on the size of your roast.
When the roast reaches 130, remove from the oven and place on the stove and let it sit for 30 minutes. In the mean time, set your oven to 500 degrees. At the end of 30 minutes, carefully drain the water from the pan and place the roast in the oven and cook for 15 minutes more. This will give your roast great color and a crispy outside. You can also do this step on a hot grill. After 15 minutes, remove from the oven and let it coast for at least 15 more minutes until it has depressurized. You have now kept your roast over 130 degrees for at least 1 hour. If you want a rarer roast, take it out at 126 but mark the time when it coasts to 130.
Your roast is now done, remove the roast from the pan and place on a carving board. The meat will be medium rare from edge to edge with out any grey or raw!
Carve those red slaps of goodness!

130 seems a tad rare for CWD infection. And I know so far it doesn't seem transmissible to humans, but let's not keep trying to find out.
The granting of a pardon is an imputation of guilt, and the acceptance a confession of it.

I'm not sure what Christmas dinner this year will be.
Probably traditional salads and barbeque.
And beer.
Lots and lots of beer.

It should coast up(continue cooking), out of the oven, to at least 137 depending on the size of the roast. Having it remain over 130 for at least an hour should kill anything with out over cooking as game should be on the rare side. If you use beef roast, the recipe is the same just don't add water to the pan.

Guinness is my second favorite beer ever.
This is my favorite by far:
(and it tastes nothing like Guinness)

I'll have to try it then. One of my favorites is Chimay Grande Reserve made by Belgian Trappist monks.

Marmite? Then you must be Australian. I lived there when I was 19 (1979) surfing from Taz to the Gold Coast. The Cascade in Taz was good and the waves at Eaglehawk Neck. The Carlton Draft in Victoria was good and got a big day at Bell's. Tooies and Tooths of NSW was good. The XXXX of Queens land was horrid! I mostly lived in Colloroy Plateau on the Northern Beaches of Sydney. Surfed Manly a lot.
I spent a month on Bali and met some Ozzy surfers. Then flew to Sydney and took a train to Byron Bay. There, I stayed at a Youth Hostel and met more surfers. I spent the next several months visiting all my new friends. One of them lived in Toorak in a mansion. I only paid for a few nights sleep. The Australians were very generous. They still call me Sepo.
Had a great night at the Royal Antler in North Narrabeen and saw Doc Neeson and the Angels. I also enjoyed the Saints, Radio Birdman, Midnight Oil and Angry Anderson's Rose Tattoo.
I overstayed my visa and got kicked out of Australia so went back to Bali and stayed there 3 months. Good times!

150 degrees f is as low as I would go and it needs to stay at that temperature to avoid exponential growth of bacteria unless you're eating it cold the next day.

Byron Bay is one of my favourite places in the world to this day.
Go there every year for a barbeque with friends, even when living in NZ.

I've seen Angry Anderson live and played in a back up band for Midnight Oil when they passed through Mackay.
I'm going to the Gold Coast next Friday.
I won't be surfing though, not that it has a great surf, unless there's a cyclone around. :-)
I'll be escorting a bunch of 7 yr olds on a school excursion.
