The only time I've ever seen an atheist try to convince a religious person to "convert" is on the internet, when they argued against the ardent preaching and threats of the non-existent "hell". I'll further comment that I consider Dante's "Inferno" to be an early example of fiction that was taken up and run with by the "Catholic Football League". Dodgy  The amount of shame that should be heaped upon the behavior of the RCC since its inception can't possibly exceed the amount of grief that said institution has caused. Talk about high crimes against humanity.

I think misrepresenting your case and deliberately tailoring it to persuade the individual is just plain disrespectful, whoever does it.

Should they avoid doing that?  I can't necessarily give them an adequate reason, no.  They need to get smarter and care more.  So I guess the lesson is, if you can't persuade an asshole to give up their assholery, avoid them.

One of the prime tenets of street epistemology is that you don't go into with the intent to convert someone. It is, rather, an exercise in making people confront and define the source of their knowledge. I'm not sure this is the same

If the purpose of the interaction is to change the other's beliefs, then yes it is equivalent.

"Should"... There's an interesting word...

I think it's impossible (or near enough) for someone to convince me to become a believer... as such, I think it's also nearly impossible for me to convince anyone to believe differently from what they believe.
I will happily share my point of view, how I came to be the way I am and what sort of events or facts have helped me consolidate my lack of belief in deities. I will try to understand the other person's point of view, how s/he came to be that way and what sort of events have helped her/him consolidate the belief in deity/ies. And I can offer my point of view on what aspects of that belief are not based on reality as I perceive it.
But I know very well that anything I say is very very very unlikely to alter the other's beliefs.
