I prefer to make mine on a dry cast iron griddle - no added fat, and they are crispy and delicious.
I don't add any oil, the trick was finding something to keep them from flying open but I got that figured out. Nice and crispy.

The missus brought home some profiteroles that one of her employees made. Tried one, not good. Opted for a bacon and cheese scone and a cuppa.

15-bean soup. I used up the last of the Easter ham. Some of it tasted distinctly of cloves.
