Blasphemy.

Standard in the business, son. You cook the ribs low and slow in the oven, you finish them on the grill. That's how you get them to fall off the bone.

I'm no big fan of ribs, but you can get the same effect by wrapping in foil and cooking offset (coals on one side, ribs on the other) and going low and slow, then removing them from the foil and finishing over the coals.

Keeps you out on the deck where the beer and sunshine are. Smile

They're typically found on the south end of alligators. :p

What's on the north end?

I am partial to ribs. I love some damned ribs. Dry rubbed, tented and baked all day on 250°F, and flash grilled with a tangy BBQ sauce with molasses to caramelize. The secret ingredient in the BBQ sauce is just a little bit of fresh smashed horseradish. Your world will change.

What he said.

You mean spikey chains rolled into a ball or bear traps on the floor on the way to the bathroom?

It's not quite barbecue, but after spending the day repairing my porch/deck, I grilled a T-bone over mesquite charcoal, and did a nice potato on the side (chopped green onion, butter, and sour cream for topping). Served with mushrooms sauteed in butter and olive oil, washed down with a nice local brew.
