Tacos al pastor - the catch is that the "meat" is a 100% plant based product. I don't think I'm a fan. Maybe if I smothered it in habanero salsa.

I am seeing ads for plant-based desserts.  I think if I am going to go that route, I will eat some fruit.

I am seeing ads for plant-based desserts.  I think if I am going to go that route, I will eat some fruit.

I quit eating (most) meat last year - ordinarily I am not impressed with faux meat / dairy products, this was certainly no exception. I am finding I greatly prefer to enjoy foods for what they are rather than to try to make them what they are not.

Leftover Korean barbecue ribs, brown Basmati rice with some Golden Mountain Seasoning, and a side of kimchi.

The last enchilada. I'm going to throw a pot roast in the slow cooker for later tonight. And I've got some Brussels sprouts that have tarried a long while. I think I'll split those, marinate them in vinegar and mustard, and air fry them after I get the pot roast started.

Beef pho. The noodles were overdone, but everything else was fine. I used half prepackaged broth and half beef stock. Seemed fine to me. And because everything was cut up from the other night, it came together in minutes.
