How do they explain the pickle jars in which their pickles arrive, where all those pickles be having an orgy?

Does the vodka burn off in the cooking?

I buy sauce in a jar. Good vodka sauce is made with actual vodka. This stuff may not be. It's just for flavor anyway.

I should hope not. Char is not a good flavor for tomato sauce. Big Grin

But yes, the alcohol evaporates out of the sauce as it simmers. leaving the flavor without the boozy kick.

Does the vodka burn off in the cooking?

Short answer: No.

Longer, practical answer: Effectively, yes. The boiling point of alcohol is about 78C, and - since most foods are cooked at a higher temperature - most of the alcohol will cook off. But cooking for an hour leaves about a quarter of the booze behind. After three hours, there’s  still about 5% left. The alcohol in food will never completely disappear, but you’re not going to get hammered from jarred vodka sauce or a slice of rum cake, either.

Braised beef with all the veggies. Took 4.5 hours including the prep.

Just murdered a home made pizza. Ham, pepperoni, peppers, onions, pineapple, all on a Naan crust.

Damn fine pie!
