Building a computer, advice? Opinions?

My only additional recommendation is to dual-boot with GNU/Linux (Mandriva, Fedora, Sabayon, and PCLinuxOS are great). Of course I have to say that because I advocate FOSS Anyhow, I seem to agree with your choices except the RAM. Do you really need 8G or memory? 4GB is plenty unless you intend to use it for a sever, but you aren't doing that since you have games and W7 listed. That's about all I have to say as of now. If I think of anything else I'll post again.

I chose 8 just so I wouldn't have to worry about it for a little while. I would boot all Linux but can't justify it without the ability to play my games easily.
