You looked up the word theory in the COLLOQUIAL sense. When speaking of the word "theory" as something in science, they are referring to SCIENTIFIC theory, which has a different meaning.
scientific theory: a well-substantiated explanation of some aspect of the natural world that is acquired through the scientific method and repeatedly tested and confirmed through observation and experimentation.
The chances of evolution being false are so infinitesimally small that they aren't worth considering.
Oh, and FYI, gravity is only a theory too. If you think the word "theory" makes it false, you are invited to leap out of a five story building and prove science wrong.
