Regarding OP:
To decide whether or not PC is an appropriately functioning mechanism in our society one must look a the definitions of the words 'politically correct.'
Most definitions of the word 'political' will define the word as: of or relating to governing, and/or the concerns of a political party. 'Correct', obviously means true and without fault ... or does it? The word correct has another meaning: to scold, rebuke, or to point out the errors. This means political correctness is a product of some ruling body's arbitrary censorship. What is the dominant group where you live? If you live in a Hispanic community you will be rebuked (corrected) for verbiage that they find offensive, and so on with any other race, creed, or sexual lifestyle of any group.
I believe this is why political correctness is such a problem. It opens a door to abuse and it stifles open communication between opposing groups. It's essentially governing censorship and any dominant group can be the "governing power". Attempting to be considerate of others feelings and sensitivities is simply polite. It has nothing to do with whether or not you have been politically correct. The biggest racist asshole in the world can hold his tongue. Being "all PC" is lip service ... it means nothing, and in truth I think the more people feel they HAVE TO be politically correct the more it breeds contempt for the group that has set themselves up to be above the opinions of others.
One will find it difficult to grow and improve if he will not even consider the opinions of others about who they are. You can always discard the angry irrational rantings of a bigot, but to simply protect yourself under the flag of political correctness has turned into a quagmire of PC bull shit here in the US. Maybe in Europe too?
Whatever your opinion, I think common sense and politeness should be enough. This business of "you better not say that here" has just become about unbearable these days.
