How can you tell? I've been watching a lot of videos about metal, and I still can't tell the good vocalists from the bad ones.

That's one of my major complaints about metal. The themes metal acts use were horribly cliche by the turn of the century, but they still use them and think it's edgy.
(Sorry, I don't mean to bash metal, but like I said, I've been watching videos about it in part to try and understand it. And I just do not get it.)
