There is actual theology behind the sneeze blessing.
Genesis 2:7 informs us our immortal souls are conveyed via the breath. A sneeze might disrupt the containment of ones soul in the body and subject it to exposure, however briefly, to the predations of Satan. A quick invocation of God to the rescue till that soul is safely re-inspirated is a sensible precaution in regards to how souls work as explained in the Bible.
I also note, for folks that consider themselves 'believers', this explanation for how souls are physically manifested is a required belief to be right with God. Any misinterpretation of how souls work or are conveyed is denying God's Holy Word in the Bible.
The granting of a pardon is an imputation of guilt, and the acceptance a confession of it.
