Yea I am sure that IS certainly a marketing tool sure. So is calling a slimy shell animal "escargot".
I have bought that particular generic brand in that exact bag for almost a decade, no, it does not stop freezer burn. Vacuum then frozen is a far better method. It is just wording to extend the ability to sell sell it. I am quite sure it wont give anyone food poisoning no, but it won't taste as fresh either.
People have been ice glazing meat since before you, I or even Min were born. I'm sure the commercial food processors have a different way of doing it, but for us do it yourselfers it's a fairly simple process. You freeze a piece of meat solid, dip it in water, freeze it again, repeat a few times until you have a thin coating of ice over the meat. The thin coating of ice does the same thing vacuum sealing does. It keeps the meat from drying out. It isn't as effective as vacuum sealing because the ice coating evaporates before a plastic bag but it serves the same purpose.
