Ignoramus here; those things look a lot like cockroaches. Could they have evolved into prawns/shrimp or Crayfish/lobsters? Not sure about lobsters, but pretty sure prawns are insects.

No, prawns are not insects. Trilobites did not evolve into shrimps or crayfishes.
Prawns, insects, and trilobites exemplify 3 of the 5 great branches of the Arthropods family. The 4th and 5th branches are examplified by millipedes and spiders respectively.
