Jewish is a people and a culture as well as a religion. Thus, you can be an atheist Jew. You're still a person and part of a culture; you've just dropped the religion part.
Islamo-Christianity is strictly a religion. Anyone from anywhere and any family background can join and be a full-fledged member. Thus, since it is strictly a religion, you can't be a member and not buy into the religion.
This is also why you can be critical of Islam without being a "racist". Islam is not a race.
