The main purpose of Quran is not provide encyclopedic information about creatures . If it was , we should have volumes of books and millions of pages. It does not talk about a lot of things , if it was include dinasours , this time you would say why does not includes penguins , if it was include penguins then you would say why does not includes baked chicken recipe with mushroom sauce .
Also other creatures have been mentioned in some verses , for example a verse refers "suaba" , it can be traslated as "dragon" . In some verses Allah says "ummah before you" , Ummah means nations or living species .
