Why would a non-Christian want to work at the Ark exhibit?
Here's the thing: there are laws in place preventing employee discrimination, as there should be. Job openings for the Ark Encounter, phrased as a tourist attraction in order to apply for tax incentives, require that the applicant be young earth creationist. This is not a legal thing to do.
It's not about a bunch of atheists lining up to work at the Ark whatever, it's about this organization wanting to have its cake and eat it too.
