You're just crazy or lying because that's impossible." Or "The cancer didn't really just go away. It was just a physical abnormality or the person is lying because it's impossible."

Don't be absurd. We simply don't claim to know that which is not known.

And you mischaracterize a skeptic's view - are you dishonest or genuinely stupid?
Skepticism is not a position; it is an approach to claims.
Science is not a subject, but a method.
