I really got into this when it was brand new. It was very interesting then because you had all these different guys with different styles and they often didn't know alot about each other's strengths and weaknesses. It was amazing watching 185 lb. Royce Gracie with his average (at best) physique take down opponents with much superior size and physique who simply could not match his fighting style. I met 260 lb. Dan Severn who Gracie defeated in UFC 4 in person and I was awed. Pictures and video don't do the man justice. Meet Severn in person and it becomes very obvious why he was nicknamed, "The Beast." You look at this man's stature in person and go, "Holy crap!"
Things evolved, of course. It became very obvious to those early combatants that if your opponent was skilled in Gracie/Brazillian Jui Jitzu and you didn't have knowledge of how to defend against it, it didn't matter what your own skills were. Might as well not bother to show up. So everybody learned to defend against it. Similarly, everyone learned the best offensive techniques. It was a logical evolution but the result is boring. Now, one fighter is pretty much the same as any other. One fight is the same as any other. It's not entertaining anymore - at least not to me.
