Do you realize the time-frame in which organisms evolve? And yes - we have been observing evolutionary steps for the past 150 years. How come bacteria develop resistance to antibiotcs? Through the power of Jebus? Or observable and quantify-able mutations in DNA?
And if species can change at all (which you seem to believe, hence the "completely different specie" clause) through mutation in relatively short time, depending on the complexity of organism in question - what exactly would stop those small changes from accumulating over hundreds of millions years, for the species to become "completely differnt"?
Evolution is perfectly falsifiable. Show me a human fossil from triassic era, or a dinosaur one from Pre-cambrian and we can talk.
Your problem - and it's a very common one - seems to be, that you can't imagine time-scale, that's million times longer than your life and space larger than your neighborhood... And of course - you're afraid of death, so you want to believe anything that suggests you won't die.

Nope. Omnipotent, all-knowing Stimbo - or any other god - could have created the world and you 20 min ago, with all the beliefs and memories already implanted in you. Prove that he didn't. (Hint: it's another unfalsifiable claim, just like existence of any god).
